Grilled asparagus and poached egg

The LBB Team in collaboration with acclaimed chefs and restaurants has tried and tested all recipes that will feature in coming posts.

Grilled asparagus and poached egg is our second recipe in these series of posts and it comes with a twist!

Serves 2

INGREDIENTS:

300g asparagus

2 tsp olive oil, for drizzling

pinch of salt

2 free-range eggs

black pepper

PREPARATION:

Heat the grill to its highest setting.

Snap off and discard the woody ends of the asparagus.

Lay the asparagus on a baking sheet and drizzle the oil over it.

Sprinkle with the salt and toss well to coat.

Grill for 8 minutes, checking the spears halfway through the cooking time and giving them a shake so they cook evenly.

Poach the eggs in boiling water for 3 minutes so that the white is set but the yolk runny.

Place the asparagus on serving plates and put an egg on top of each serving.

This is a 238 calories dish with less than 3% fat

In case you desire to give it a lift, opt for a MISO Hollandaise sauce on the side.
Miso hollandaise is made without butter, but has all the creamy richness of the French classic.

Miso Hollandaise

INGREDIENTS

4 tbsp soft/silken tofu

2 tsp soy sauce

4 tbsp miso paste

2 tsp rice vinegar

3 tsp lemon juice

black pepper

PREPARATION:

Put all the ingredients into a bowl or blender and whizz to make a smooth sauce.

Use immediately, or store in a  jar in the fridge until needed.
