The 300 something calories recipes is a series of food posts of small dishes that are going to help you shed the extra pounds and get you the beach body you deserve to have for summer 14 plus will let you experience full flavors that will eventually become part of your daily healthy menu.

The LBB Team in collaboration with acclaimed chefs and restaurants has tried and tested all recipes that feature in the 300 calories posts.

The freshly cooked mussels are today’s recipe which you ll find surprisingly quick and simple to prepare.
This is a 297 calories dish with less than 4%  saturated fat

Serves 4
1kg of fresh mussels
4tbsp olive oil
3 cloves garlic, crushed
3 tbsp sun-dried tomato puree
450g vine tomatoes chopped
1tsp fresh lemon thyme leaves chopped OR parsley or dill.

1_Wash the mussels under cold running water, pulling away the “beards & discarting any broken shells.
2_Warm the oil in a large saucepan and fry the garlic for only 30 seconds.
Add the sun-dried tomato puree and 4 tbsp of water.
3_Add the chopped tomatoes and half the amount of thyme To the pan with plenty of black pepper and a little salt
Bring to the boil and cook for a few minutes until the tomatoes have softened a little.
4_Add the mussels, cover with a lid and cook for 5 minutes, shaking the pan frequently, until the mussels have opened
REMEMBER! You should discard any that remain closed
5_ Serve in shallow bowls, topped with the remaining thyme OR replace it with parsley or dill.

OUR TIP: Add a splash of White wine with the sun-dried tomato puree.
