The LBB Team in collaboration with acclaimed chefs and restaurants has tried and tested all recipes that feature in the 300 calories posts.

The scallop carpaccio recently tasted at Nammos restaurant in Mykonos was an interesting interpretation of the dish which you will find surprisingly quick and simple to prepare.
Instead of carpaccio , you can also just marinate the scallops, leave them uncut and serve them with a handful of brown rice and a dash of white truffle oil OR salad as below
Yummy, healthy, light!

INGREDIENTS
FOR 1 SERVING
–4 scallops cut into thin slices
MARINADE:
–1 shot of Soy sauce
–1/2 shot of grapefruit juice
–1/2 shot lime juice
–1/2 shot orange juice
Salt & Pepper

PREPARATION
Marinate the scallops for 5 hours or overnight and leave them in the fridge .
Cut them into thick slices and serve them on a dish.
Sprinkle with freshly chopped coriander
